Braised lamb rack with creamy mash potato rosemarry jus

Ingredients

Newzeland lamb rack 0.75 kg

Thyme 0.25 kg

Potato 0.50 kg

Rosemarry 0.25 kg

Celery 0.10 kg

Rosemarry 0.25 kg

Carrot 0.50 kg

Onion 0.50 kg

Demiglaze 0.25 kg

Popcorn 0.25 kg

Sugar 0.25 kg

Butter 0.25 kg

Milk 0.25 lit

Olive oil 0.25 lit

Salt to taste

Black pepper to taste

Method: 

Preheat oven to 400.F degree

Spray olive oil in baking tray, arrange slice onion, carrot, thyme, celery and Lamb Rack.

In small bowl make margination with olive oil, chopped rosemary, lemon juice, chopped garlic, salt and pepper mix together.

Pour margination over lamb rack, make sure all the rack is covered with margination .tossed bit if necessary.

Sprinkle with salt and pepper.

Lamb rack uncovered for about 1 hrs. Until Meat are fully cooked.

Take fresh potato peeled properly, Cut in to small diced boiled with milk and salt for 20 minutes, Then smash hot potato with masher.

Take pan put butter, potato and cream and cooked for few minutes then add seasoning.

For sauce take one pan put butter, chopped onion, garlic ,thyme, slice mushroom ,sauté for few second then add demi glazed and seasoning.

Serve Braised lamb with mashed potato and garnish with caramelized popcorn.
